August 13, Tex-Mex Chipotle Paste

1 can of Embassa chipotle peppers in adobo sauce, seeded.
1 bunch of Cilantro
1-2 cloves of garlic
1 small onion

Put this into a food processor and chop it up.

Add 1/5-1/4 cup of olive oil (I used roasted garlic olive oil)
Add 1/5-1/4 cup of lime juice
1 teaspoon of cumin
1/2 teaspoon fresh ground pepper
1/2 teaspoon kosher salt
2 tablespoons Tequila

Add to the food processor and puree into a paste.


Smear this immediately onto your meat (in my case, small sirloin tip steaks)
you can also use some of the adobo sauce.
